This is Lucid, from Morgan Estate a highly special farm to us. 4 years ago in Hong Kong, we drunk an espresso with coffee from this farm pulled by Dawn Chan at Cupping Room in Hong Kong, roasted by Sweet Bloom Coffee. It was clearly apricot. A hot apricot like we have never drunk before. This espresso triggers something in Joachim Morceau’s mind to go further, to improve himself. A week after back in Paris, working at Terres de Café that time, a man came in, ordered an espresso and started to talk about his farms. This man was Savage Coffees Jamison Savage, the producer of Morgan Estate and Finca Deborah ! He invited us to come to his farms in Panama. 2 months after with Christophe Servell we discovered two marvelous farms including Morgan Estate which looks like a huge home garden. We have this year the Lucid, which is a natural geisha. At the beginning it is a fermented cocoa, praliné, then come the sweet mango and the papaya. You end up with rose aftertaste.
