Words from Finca Sophia :

Poro is named after the Poro (Palo Santo) trees that stand throughout this section of the farm. Valued for their nitrogen-fixing qualities, these trees enrich the soil and enhance the vigor of the surrounding coffee plants. Situated between 2,026 and 2,094 meters, Poro is planted primarily with Geisha.

Trees growing closest to the Poros often show particularly strong performance, yielding coffees of remarkable clarity and vitality.

were carefully harvested on April 2, 2025 and washed to remove impurities and floaters. After pulping, the beans underwent a 36-hour dry fermentation, followed by a thorough washing to ensure the complete removalof muciage. They were then taken to African beds for 10 days of pre drying, before completing their slow and even drying in the darkroom until reaching 105% humidity.

We were so lucky to visit this farm in 2024 guided by Kelly Hartmann and in 2026 guided by David Pohl. It is a beautiful farm, very high in altitude.
