About the fermentation :
“Harvested burgundy-ripe, then pulped and then washed when the full fermentation has been reached, in other words when the mucilage has done its job on the seed and is ready to be removed. This fermentation takes place at Elida (night temperatures 13 to 15 and day 18-20) from 36 to 48 hours. Then after washing, the seeds go on the drying beds and drying takes 15 to 20 days.”
